Paleo Chicken Tandoori Skewers

This is becoming on of our favorite meals at home and mainly because it is so flavorful and require very little prep time! For this recipe I used my favorite coconut yogurt; Culina coconut yogurt in the Tandoori marinade. Culina is an Austin brand that I have only been able to find at Central Market here in Houston. I love this brand as the ingredients are clean with not funky additives and it also has an amazing creamy and thick texture and delicious taste. If you are not following a paleo diet or do not have sensitivities to dairy you are more than welcome to sub full fat grass-fed greek yogurt for the coconut yogurt in this recipe! So why use yogurt in your marinade? Well.. not only does it provide enzymes and bacteria to tenderize your meat; but it also creates a very thick marinade that will stick to the chicken throughout the grilling process; rather than dripping off into the grill. As a result; the end product is fully coated in the marinade and extremely tender and flavorful! 

GATHER

1 pound of chicken breast ( about 2 large chicken breast) 

8-12 bamboo or stainless steal skewers 

5 oz coconut yogurt ( I love Culina Coconut Yogurt

2 tsp Tandoori spice blend ( I love Pondicherri's Tandoori Masala) *

1 tbsp coconut aminos

2 tsp honey

1/4 tsp salt

MAKE

If using bamboo skewers first start by soaking them in water for at least 30 minutes prior to grilling. Prep marinade by mixing together yogurt, honey, coconut aminos, salt and tandoori seasoning. Taste marinade and assess for salt and additional seasoning if need be. Next cut your chicken breast into tenders. I usually make mine about 1-1.5 inches thick by cutting the chicken breast length wise. Place your chicken tenders into your marinade and ensure each chicken piece is coating well in the yogurt mixture and allow your chicken to marinade for 30-45 minutes. 

Preheat your grill to 425F. Thread your marinated chicken tenders through your pre-soaked bamboo skewers or stainless steal skewers. I like to coat the chicken tenders with the leftover yogurt marinade in the bowl before grilling. Place chicken skewers directly on the grill with the lid closed and grill for 3 minutes on each side.  Remove from the grill and serve with golden okra and peppers or your desired side dish and enjoy!
