Bacon "Mac & Cheese"

Although there's no noodles and no actual cheese used in this "mac & cheese" recipe, it is still packed with all the flavors reminiscent of this traditional comfort food, and it's gluten and guilt free The ingredients are surprisingly few and simple yet the finished product tastes anything but. Spaghetti squash is used in place of typical pasta making it the perfect low carb or Ketogenic recipe. In place of cheese this recipe contains a dairy free dupe with the secret ingredient of nutritional yeast that provides a nutty, creamy and "cheese" like taste to the recipe! As no chemicals, grains or dairy is used in this recipe this is the perfect Whole 30 and Keto recipe to start 2018 off on track! 

GATHER

1 medium spaghetti squash

1 tbsp ghee

1 package of bacon cooked in oven or in pan and diced (Pederson's)

1/2 cup loosely chopped basil 

2/3 cup full fat canned coconut milk 

1/4 cup nutritional yeast 

2 garlic cloves, sliced thinly

1/2 tsp truffle salt or to taste

1 pinch paprika 

MAKE

Preheat oven to 375 F. Heat spaghetti squash in microwave until you are safely able to cut in half length wise. Remove seeds from center of spaghetti squash. Line baking sheet with tin foil and spread avocado oil on foil before placing spaghetti squash halves face down.Place on center rack and allow to cook for about 30 minute or until you are able to run a fork through the flesh. You will be cooking the squash a second time on the stove top so be sure not to over cool it! Once the spaghetti squash is done remove from the oven and using a fork remove the flesh from the outer skin and set aside. Turn the oven off.

In medium skillet heat 1 tbsp of ghee and sliced garlic on medium heat on stove and cook until tender and fragrant. Reduce heat to low and add in coconut milk and nutritional yeast and mix until smooth and creamy and remove from heat. Season with truffle salt to taste and add in a pinch of paprika as desired. Add in spaghetti squash and bacon pieces and mix until spaghetti squash is well incorporated with sauce. Add additional truffle salt or kosher salt as desired. Toss with freshly chopped basil before serving and enjoy!
