Harissa Slow Cooker Chicken Thighs
This spicy chicken recipe is many things but is definitely not boring. This simple slow cooked chicken pairs perfectly with curried cauliflower for an easy low carb or ketogenic dinner.
2 pounds boneless, skinless chicken thighs
1/3 cup Harissa Sauce
1/2 cup full fat canned coconut milk
1/2 yellow onion, diced
1 tbsp coconut aminos
1 tbsp apple cider vinegar
1 tsp honey
1 tsp cinnamon
1 pinch sea salt
1 tsp avocado oil
Preheat slow cooker to high and add diced onion to the bottom. Sear both sides of chicken thighs over medium to high heat on skillet that has been greased with the avocado oil. Add the seared chicken to the slow cooker with the onion. In medium bow whisk together the harissa, coconut milk, coconut aminos, honey, vinegar, sea salt and cinnamon before pouring over chicken. Allow chicken to cook for 2 hours on high in slow cooker or 4 hours on low.
