Liberty Provisions Lamb Chops



2 pounds lamb chops 

1 tbsp grass fed butter

2 tbsp avocado oil 

1 tbsp chopped thyme

1/2 tsp salt

1/4 tsp black pepper


Preheat oven to 400 F. Place lamb chops in glass bowl and toss with salt,pepper, thyme and 1 tbsp avocado oil and allow to sit at room temperature for about 30 minutes prior to cooking. Heat 1 tbsp butter and 1 tbsp avocado oil in oven safe pan over medium to high heat. Once butter is completely melted and begins to sizzle, place lamb chops in the pan and sear for about 1-2 minutes on each side or until adequately browned. Place oven safe  pan with the lamb chops on the center rack of the oven and cook for an additional 5-6 minutes. After 5 -6 minutes remove from oven and cover with tin foil and allow to rest. Serve with mint chimichurri.
